This is VERY similar to the recipe we have been using in my restaurant for years. Mozzarella cheese doesn't come in 10 oz. I think it added some additional texture and flavor to the lasagna. Definitely use two!

Thank you! I used ricotta instead of cottage cheese mostly just because I had never heard of using cottage cheese.
Yeah, it's a little unclear, because most people are expecting to finish the lasagna with a layer of cheese. If you layer the lasagna as stated in this recipe or any other with noodles meat sauce cheese of choice and again the noodles will come out go here every time. First time I made this I had rave easy lasagna recipes without ricotta cheese. I made my pasta sauce overnight in the crockpot and only had to add the ingredients into the oven dish as prep. Only had heavy cream so used it instead with the three eggs.
